Ingredients
- 500 ml (2 cups) flour
- 10 ml (2 tsp) baking powder
- 25 ml (1/4 tsp) salt
- 125 ml (1/2 cup) unsalted butter, softened
- 250 ml (1 cup) sugar
- 2 eggs
- 5 ml (1 tsp) vanilla
- 125 ml (1/2 cup) 2% milk
- 4very ripe bananas, mashed (about 410 ml – 1 2/3 cups)
- 310 ml (1 1/4 cups) semisweet chocolate, cut into pieces
- 180 ml (3/4 cup) walnuts, cut into pieces
Preparation
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the flour with the baking powder and salt.
- In another bowl, whip the butter with the sugar until light in colour
- Add the eggs and vanilla to the butter and sugar. Stir.
- Incorporate the dry ingredients, alternating with the milk, and stir until evenly mixed.
- Add the mashed bananas and 250 ml (1 cup) of the chocolate. Stir with a wooden spoon.
- Grease a 20 cm x 10 cm (8 in. x 4 in.) loaf pan and pour in the batter until three-quarters full.
- Sprinkle the nuts and remaining chocolate over the batter.
- Bake for 1 hour and 15 minutes, or until a toothpick inserted in the centre of the loaf comes out clean.
- Remove from the oven and let cool on a rack.
