Ingredients
- 300 g (2/3)skinless salmon fillet, diced
- 500 ml (2 cups)garlic mashed potatoes
- 2 egg whites
- 60 ml (1/4 cup) mayonnaise
- 3 green onions, chopped
- 60 ml (1/4 cup) dill, chopped
- 1celery stalk, finely diced
- 15 ml (1 tbsp) lemon zest
- Salt and pepper to taste
Preparation
- Preheat the oven to 205°C (400°F).
- In a bowl, mix the diced salmon, mashed potatoes, egg whites and mayonnaise until evenly combined.
- Add the green onions, dill, celery and lemon zest. Season with salt and pepper and stir.
- Grease all 12 cups of a muffin tin and divide the mixture among the cups. Bake for 20 to 25 minutes.
